Breakfast Bread

Every year, my family looks forward to our Christmas breakfast.
If I didn’t make this bread, I think I could very well disappoint them all!


Christmas Breakfast Bread


2 Rolls Frozen Bread Dough
1 lb. Sage Sausage
12 ounces Shredded Cheddar Cheese
6 eggs
1 egg for egg wash
1.   Follow the directions to defrost and to allow the bread dough to rise.
2.   Punch down the dough and press out the dough with your fingertips making a rectangle.
3.   Brown the sausage making the meat as finely ground as you can. Drain the fat
4.   Combine the browned sausage, cheddar cheese and eggs
5.   Spread ½ the mixture onto one of the rolled out bread dough
6.   Roll up the dough around the filling – jelly roll style. Pinch the edges and lay on a prepared baking sheet with Parchment paper with the seams on the bottom.


7.   Prepare egg wash by adding 1 ½ tablespoons water and whisking until completely yellow.
8.   Brush the top of the bread with the egg wash and bake in an oven set at 350 degrees until browned and sounds hollow when tapped.
9.   Serve warm – sliced.

Strawberry Pancakes

Strawberry syrup

2 c sliced strawberries
1/4 c. sugar 

chopped strawberries
add sugar
slowly simmer until thickened
simmering

meanwhile

Pancakes:

2 1/4 c. self rising flour
1/3 c. sugar
1/4 c. canola oil
1 c. buttermilk
1 egg
2 tsp vanilla

1. I use this small whisk to combine 
the flour and sugar
2. make a well in the middle of the 
dry ingredients
3. pour in the oil, buttermilk, egg and vanilla
4. gently stir wet ingredients to incorporate
5. slowly combine dry and wet ingredients
stop once incorporated.
6. cook in melted butter on med-low heat
7. watch for dry edges and bubbles to appear
to know when to turn over pancakes.

Top with strawberry syrup and enjoy!


This is normally a weekend type breakfast - but...
how can you resist!

The generosity of our neighbors has added to our Sunday meal.
Our neighbor stopped by with goodies. Fresh eggs and freshly picked green beans, squash and potatoes.
I had already planned to use a roast my husband grilled for our Sunday dinner and was thrilled to add these fresh veggies as sides.

For breakfast, I made Blueberry French Toast. I had found the Sarah Lee Blueberry crumble bread and thought it would make great French toast.

combine eggs and milk
add cinnamon, sugar and vanilla
coat blueberry bread with milk/egg batter and fry in melted butter
they were beginning to disappear before I could take a picture!
Oh, boy did it!!!
As they were cooking the blueberry fragrance came through and they had a wonderful
Flavor!
For lunch I sautéed the squash, sautéed the green beans and roasted the potatoes.

The only thing left to make is the bread. My husband thinks a meal isn’t complete without some type of bread. Is that a southern boy thing?

On Friday, my darling daughter heard that my husband had a tough week. She then baked this delectable cake using a recipe from Chocolate from The Cake mix Doctor’s cookbook . We have always had success with her recipes!

Have Three Ripe Bananas
and
It's Muffin Time

Banana Muffin Recipe
3 very ripe medium bananas
1/2 c. softened salted butter
1 cup sugar
1 large egg
1 tbsp vanilla
2 cup self-rising flour
* toppings of your choice
1. In an electric mixer mash the bananas
2. add softened butter on med setting
3. add sugar continue mixing
4. add egg - continue mixing
5. add vanilla
6. stop mixer
7. add flour
8. slowly mix in flour and
stop once incorporated.
9. scoop by large spoonfuls into
paper cupcake liner (or spray with
Pam spray if you prefer)

10. Topping Choices:
chopped nuts
chocolate chips
chopped cranberries
cinnamon
coconut
streusel (mix brown sugar,
butter, flour)
peanut butter chips
dried bananas chipped
**
use your imagination!
11. bake at 350 degrees -begin checking at
15 minutes.
Eat while warm - 
enjoy!
